It would be nice to be able to have information that was captured in previous fields be able to be auto-populated into fields on subsequent pages/sheets; e.g. if a submitter enters in a name/phone number/whatever at the start of a document, have it be able to be auto-populated into field on a different sheet further in the workflow sequence. Also, having the ability to have certain kinds of field masks that indicate that a specific cell of data should be cascaded across all subsequent pages/sheets, again, as in the case of names and the like so that it is easier to know what document belongs to what person because they're name is on more than just the initial page and the submitter doesn't have to manually enter in it on each subsequent page.

This is achievable with a Mirror field. To learn more, visit the Help Center article, "Configuring Mirror Fields in the Builder."
You could use the MIRROR function for showing previous field data on subsequent fields.

Mirror fields now exist and are ideal for what you've described above. You can get your summaries without having to use the backdoor. The great news here is that with these fields, you CAN Mirror across Workflows (which isn't possible with the backdoor).
