It would be nice if when I send service calls they would go through in order. This way our technicians would know in which order they are to do their calls in.

You are currently able to schedule out your dispatch using time and date. There is also the option to add a description to your dispatch so you can provide context as to what order you'd like your technicians to call. These descriptions will show up on their screen as well. - https://help.gocanvas.com/hc/en-us/articles/115006630847-How-to-Use-Dispatch
These dispatches show bottom to top so we recommend working from the bottom of a task list on your device.
