Hey Chad,
You can do this using a hidden mirror field. Set up your 12-hour time field like normal, then add a mirror field that references that time field; that mirror field can have a different style, so you can switch that to 24-hour and put that one on the PDF (I'd also set it to not display on mobile just so it doesn't confuse users). That mirror field will automatically match the original time field, but appear in 24-hour format.

I tried to do what you said with the hidden mirror field, but the mirror field doesn't allow me to change the time format, it just said the mirror field type was time. Am I missing something??

This is going to sound insane (and I *knew* should I have taken a screenshot) but I swear it let me do it yesterday... or I did it wrong. I can't figure a way around this other than having separate fields. I tried with the mirror backdoor, but it won't convert the format. I tried some ridiculous stuff with calculations (which I think ultimately could work, if someone who's better at math wanted to take a swing). So sorry to get your hopes up here! Maybe someone else has figured this out?
I got your back Sara, check this out....
Create a calculation field with Operator 1 being the field you want to convert and then subtract or add a constant of 0. Set the format to HH:MM. The HH:MM is a 24 hour format so it works perfect. All I have to do is not show the time field on the PDF and hide the calculation field from mobile.
