Thank you for this feedback! I can definitely see how an Undo feature would be helpful when building apps and designing PDFs. I would advise upvoting this similar Feature Request:

Our Product Team is in the planning stages for major updates to the App Builder and PDF Designer. I have directly shared this feedback with our Product Managers (along with the number of upvotes on the existing request), making sure to emphasize the desire for this functionality.
