Is there a way to change the orientation of the header of the Fields so that they are horizontal instead of vertical?

I played around a little bit with the idea of using an image (like the one you provided) to get exactly what you're asking... I got close, but likely not good enough:
That method would actually probably work okay for things that are NOT in a Loop Screen, but with a Loop, you have the extra spacing.
I think the only way to make that happen with a Loop is to talk to our Client Engagement Services.
I'd also be happy to convert this to a feature request if you'd like, so that other folks can chime in with how much they'd like to see this functionality.
