When using departments, it would be HELPFUL to be able to put the Department as a piece of data that could show on the PDF somehow. This would help if a user is in multiple departments and wish to indicate on behalf of which they were submitting.

This is a great suggestion! Thank you for sharing it.
Not an ideal solution as it requires some maintenance, but if it's truly important to have in the meantime, you could potentially make a copy of the App in each department and have the department name show up as static text in each PDF. Of course, this means you'd need to maintain multiple versions of the App, which can get cumbersome if they require frequent updates.
