Could it also be tied to reference data so that a global company can have this currency symbol change depending on what country their user is logging in from?

The currency in your Apps will reflect the region set on your mobile device. I just switched my iPhone to UK and now get pounds instead of dollars:
And if I switch it to Ireland I get Euro:
And now back to USD:
On iOS, this is done in your Settings - General - Language & Region. I believe on Android it's automatic based on your location, but I can look into that further.

(Just my 2 cents) I believe for Android it is just based on location, but whenever I tested previously, I would always make sure to change my language and my location to be correct. for example, if I set my location to France, I would also change the language to French, thus my currency would no longer be USD. Android allows you to specify what languages you prefer, on top of your location you set in the device settings. Location seemed to be more important though in testing. Since this is a setting on the device level, I believe there are forums out there which discuss this from a developer standpoint. I know I found one once for iOS.
