A common hurdle we see admins running into is being able to switch an app with workflow from "email field" to "email list".
What happens is you've got one workflow handoff set to email field, with an email field selected. When you try to toggle to email list and enter an email, you don't see the icon for typing a user's email in and are prevented from entering data into the field
Here's how to quick fix the issue: change the selected email field to blank, click save, and then select "email" list in the toggle. After that you should be able to enter the emails in the field.
