How 'bout a sample or example text, that's light grey or otherwise different than entered text, that basically goes away when you select a text box or start typing? Particularly, I don't want any way for the example text to end up in the report unless it's retyped.

Thanks for posting to the Community! I know we utilize something similar in the Form Builder, prompting the user to "Type field name" for example. I can definitely see how this would be helpful when completing a submission as well. Using Default Value would be the closest approximation to this, although the user would need to delete it before typing. I can pass this request along to our Product team but in the meantime, work arounds that I have seen used include a Static Text field above the field that is not included on the PDF or using the field label as a place to provide instructions, instead of a specific field label, and then using PDF & Web Label to rename the field only in the submission output.
